Now, Red Rock Resort and Green Valley Ranch (Station Casino properties) are looking to offer more vegan food in Las Vegas at their restaurants, too. As the Valley witness exponential vegan growth in 2018 ( one new vegan restaurant opened in March, three more are slated to open this month – Blinders Burgers & Brunch, Chef Kenny’s and Amber’s Smoked Vegan, plus another two opening in May), more restaurants around Las Vegas are expanding their options to cater to the burgeoning vegan dining scene in Las Vegas and the ever-expanding vegan demand.
